Parmesan Potato Stacks
4C Ingredients :
4C HomeStyle Parmesan Cheese
Ingredients:
¼ cup Butter (melted)
¼ cup Olive oil
⅓ cup 4C HomeStyle Parmesan Romano cheese
2 tbsp Thyme
1 Clove garlic
4 Potatoes
1 tsp salt
Black pepper
Directions:
- Preheat your oven to 350°F and coat your 12-cup muffin tray with non-stick cooking spray.
- Peel the potatoes. Slice them into very thin slices using a knife.
- In a large bowl, combine the melted butter, oil, thyme, garlic, parmesan, and a large pinch of salt and pepper. Add the potato slices and toss in the mixture until well coated.
- Layer the potato slices evenly in the muffin tin, until they reach just above the surface. The potatoes will shrink once cooked. Cover the muffin tray with foil and transfer to the oven.
- Roast the covered potatoes at 350°F for 15 minutes, then remove the foil and cook at 375°F for 30-40 more minutes until golden and crispy. Remove the potato stacks from the muffin tray and enjoy!
