Scallops Gratin
4C Seasoned Panko Bread Crumbs
Ingredients:
1/2 cup 4C Seasoned Panko Bread Crumbs
1/2 cup water
½ teaspoon salt
6 tablespoons butter
3 tablespoons vermouth or dry white wine
1 pound bay scallops
Directions:
Preheat oven to 450°F.
In a large bowl, combine the crumbs, water, and salt, let stand for 5 minutes, until the liquid is absorbed.
Melt 3 tablespoons of the butter in medium skillet.
Brush 10” glass pie dish with some of butter. Place scallops in single layer in prepared dish, set aside.
Add the crumbs to the skillet. Cook over medium-high heat until crumbs are browned and crisp, about 10 minutes, turning often. Place in a bowl.
Wipe the skillet clean and add the remaining butter to melt. Add the vermouth or wine. Drizzle over the scallops and then top with the crumb mixture.
Bake for 10 minutes or until the scallops are opaque.
