Eggplant Pizzas
4C Ingredients :
4C Bread Crumbs
4C HomeStyle Parmesan/Romano Cheese
Ingredients:
1 large unpeeled eggplant, cut into 1” slices
1 cup 4C Seasoned Bread Crumbs
3 eggs, lightly beaten
1 cup marinara sauce
1 cup sliced fresh mozzarella cheese
½ 4C HomeStyle Parmesan/Romano Cheese
Fresh basil leaves
Directions:
Preheat oven to 350 degrees
Salt eggplant slice on baking sheet.
Put eggs and crumbs in separate bowls
Dip eggplant slices in egg, then coat with 4C Bread Crumbs
Place on baking sheet and drizzle with olive oil
Bake for 10 minutes or until crisp on one side. Flip and drizzle oil and bake 10 more minutes
Top each slice with marinara sauce, then mozzarella cheese and sprinkle with 4C Parmesan/Romano cheese. Bake 5 more minutes or until cheese is bubbling
Top with fresh basil
